Ceremonial grade matcha is the highest quality and purity variety of Japanese green tea matcha used in ceremonies exceeding even organic matcha powder. Once stone ground, the difference in color is apparent. The distinct green color and frothy texture when stirred exceed both organic and culinary grade in appearance and rich flavor. Ceremonial grade matcha is made only from shade-grown baby green tea leaves, while organic consists of sun grown sometimes burnt tips, and culinary contains lower leaves and is intended for mass production. PHIL’S MATCHA MUFFINS (unsweetened)

You can add honey+ sugar to make sweet

1 cup of all purpose flower, 1 cup almond flour, 1 cup coconut flakes (small/shredded), 1tsp baking soda, 1tsp baking powder, 1 tsp Man Eating Tiger matcha powder, 1 cup oats (all dry ingredients) 2 overripe bananas, 1/2 cup mixed berries, 1 tsp vanilla, 1 cup apple cider or oat milk. 1 egg beaten.

Mix dry ingredients. Then mix wet ingredients. Mix in fruit. Combine all three and stir well. Then pour out into 12 muffin cups. Bake 15-20 minutes. Cool for 5 minutes. Then eat!

Ingredients

  • 2 tbsp ceremonial grade matcha powder (we recommend Man Eating Tiger brand)
  • 3 tbsp honey
  • 3 cups Greek Yogurt (substitute 1 Avocado OR 3 scoops of ice cream)
  • 1 tsp vanilla extract

Instructions

  • Combine and stir all ingredients until smooth inside a mixing bowl
  • Fill popsicle molds with smoothened mixture and place in the freezer for four hours, or until completely frozen
  • When ready to serve, run popsicle molds under warm water to loosen the popsicles. Remove and serve immediately.
